Raisin Filled Cookie Recipe-Sponsored by BakeItFun!



I am tired of making chocolate chip cookies . Raisin filled cookies are surprisingly easy to make! My favorite brand of raisin filled cookies are the Yost brand, but I can not find those where we live. Instead I dug out the church cookbook again and found several recipes for raisin filled cookies.




 I picked the recipe that did not call for Crisco or lard.. I prefer to use real butter when I cook and using lard is just creepy to me..

The ingredients are SIMPLE.


  1.  1 and 1/2 cup sugar
  2. 3/4 cup butter
  3. 3 eggs
  4. 3 3/4 cups flour
  5. 1/2 teaspoon
  6. 1/2 tsp salt
  7. 3 Tablespoons Cream ( I substituted milk ) 
  8. 1 1/2 teaspoon  vanilla

 1. Cream butter and sugar until light and fluffy.
 


2. Next add the 3 eggs

Eek my mixer has chocolate on it.. whoops. 











3. My directions say to sift flour, soda and salt three times. I didn't do that. I put them all into a bowl and shook it and called it good enough.




4. Add the flour mixture to the creamed butter and sugar.

5. Next add the cream ( in my case milk) and vanilla to the mix






6. Mix it well until it turns into a dough




7. MOST IMPORTANT step. . PUT IT IN THE FRIDGE. This will make it easy to roll and fill.


While it chills make the filling.


  • 1 1/2 cup chopped raisins
  • 1 1/2 cup sugar
  • 3 Tablespoons flour
  • 1 1/2 cup hot water




1. Put raisins in hot water ( the recipe says chop them but I gave up on that)



 2 Add sugar  I ran out of white sugar. I mixed in a little bit of brown sugar.


3. Add flour ( this will thicken the mixture)


4. Cook until the sugar and flour dissolve.



5. COOL before using


The dough should be chilled by now and easy to roll it out. This is where the BakeitFun mat was tested.

To use the mat

  1. First wash the mat either on the top rack of the dish washer or by hand in soapy water. 
  2. Season the mat with cooking oil 
       




The mats only need re-seasoned if you wash them in the dishwasher.


Now to finish the cookie!

1. Remove the dough from the fridge


2. Roll out the dough. (PS this rolling pin is older than me, it was my Grandmother's rolling pin)


3. Cut out the dough into circles. I recommend using a glass or something smaller than I used in this blog post.

4. Put them on the BakeItFun Mat 
and drop a little of the filling in the center.


5. Then take another circle and put on the top.


 6.  Repeat

7. My cookbook says bake at 375 until golden brown.. Bake at 375 for 13 minutes.

Breaded Porkchops, Risotto, Carrots and Cucumbers

My walls aren't dirty, I tore down wallpaper and we haven't completed that project yet..

It drives me crazy when people say they can't make a semi healthy , homemade and fast meal that is also affordable. Tonight I made breaded pork chops, rissotto, organic carrots and cucumbers for dinner. It was fast, affordable and EASY!

  1. Mix an egg and with a tablespoon of milk. 
  2. Flour
  3. Bread Crumbs 
I buy meat when it is on sale at Wegman's and package it individually to freeze. Wegmans typically has $1.00 off Fresh Meat coupons and a $5 off $25 purchase coupon that can be combined.


4. Dip in Egg





5. Dip in Flour




6. Dip in Bread Crumbs




7.  Fry on Each side for about 2 minutes each

       




8. Baked in the oven at 350 for 30 minutes

Note that I burnt one... I let if fry more than 2 minutes. 


I made an easy side of Lundburg Risotto that was cheap during Super Doubles at Harris Teeter.

KidFresh-Product Review






Our family was selected to try KidFresh frozen meals. Mom's Meet sent two $4.00 off coupons to be used to select frozen meals. We took our six year old to Harris Teeter to select his meals. He was SHOCKED because we usually do not allow typical "kid food" in our home. He selected Wagon Wheels Mac+Cheese that has real grated cheddar + creamy cheese sauce with hidden vegetables. The dinners are $4.19 at Harris Teeter in Ellicot City, Maryland. Which seems expensive for small frozen meal. ( The coupons sent were for $4.00, so expect to pay at least $4.00 per meal)

                                                                         
As you can see he was excited to try it. The green packaging appealed to him.

 It seems this brand is geared toward picky eaters with its limited choices of typical kid food. Chicken Nuggets, Mac  Cheese, Fish sticks, and pizza. It doesn't do a lot to expose children to new ideas or concepts, but instead hides the vegetables in the food. In my personal opinion this is NOT the way to expose your children to new foods or deal with the issue of a picky eater. My son LOVES to eat and hiding vegetables never was a never concern in our home, as I am a firm believer that if you do not expose them to junk food early they won't know it is an option. With that being said, I am always looking for a fun, fast and creative option for days we are rushed. My son was thrilled to have read the box and asked for the Macaroni and Cheese dinner for breakfast. I complied, because it seemed to be a relatively healthy dinner.


All the ingredients are easy to recognize with out chemicals or other gross items. 






There is also a generous amount of cheese in the container.

Simple to make, just peel the plaster back to vent and heat for 3.5 minutes.

When it melts not all the Wagon Wheels get covered with the cheese. Leaving several naked wheels. Even when mixing it.

As you can see my son did eat it. He didn't complain about it, but it didn't thrill him like other meals that I make at home.


In my personal opinion, KidFresh meals are expensive, but okay to keep in the freezer for a day that is too busy to cook or when you forget to use your crock pot.
